- 1 pound breakfast sausage
- 1 (32 ounce) package frozen hash brown potatoes, thawed
- 1 cup chopped onion
- 1 cup chopped green bell pepper
- 4 large eggs
- 1 cup milk
- 1 (8 ounce) package cream cheese, softened
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, cook the sausage over medium-high heat until browned. Drain off any excess grease.
- Add the chopped onion and green bell pepper to the skillet with the sausage. Cook until softened, about 5-7 minutes.
- In a large bowl, whisk together the eggs, milk, softened cream cheese, salt, and pepper until smooth.
- Stir in the cooked sausage mixture, thawed hash browns, and shredded cheddar cheese.
- Pour the mixture into a greased 9×13 inch baking dish.
- Bake for 45-55 minutes, or until the casserole is set and lightly golden brown on top.
- Let stand for 5-10 minutes before serving.
Notes
- For a spicier casserole, use hot breakfast sausage.
- You can substitute bacon for sausage.
- Add other vegetables like mushrooms or jalapeños if desired.
