Description

  • 1 pound breakfast sausage
  • 1 (32 ounce) package frozen hash brown potatoes, thawed
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 4 large eggs
  • 1 cup milk
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, cook the sausage over medium-high heat until browned. Drain off any excess grease.
  3. Add the chopped onion and green bell pepper to the skillet with the sausage. Cook until softened, about 5-7 minutes.
  4. In a large bowl, whisk together the eggs, milk, softened cream cheese, salt, and pepper until smooth.
  5. Stir in the cooked sausage mixture, thawed hash browns, and shredded cheddar cheese.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Bake for 45-55 minutes, or until the casserole is set and lightly golden brown on top.
  8. Let stand for 5-10 minutes before serving.
