Description

A delicious rustic cake perfect for cold winter evenings. It combines the sweetness of apples with the tartness of cranberries.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 3 medium apples, peeled, cored, and chopped
  • 1 cup fresh cranberries
  • 1/4 cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.
  5. Gently fold in the chopped apples and cranberries. If using, fold in the walnuts.
  6. Pour the batter into the prepared pan and bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.

Notes

  • You can substitute frozen cranberries; do not thaw them first.
  • For extra flavor, add a teaspoon of cinnamon to the dry ingredients.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
