Description
A delicious rustic cake perfect for cold winter evenings. It combines the sweetness of apples with the tartness of cranberries.

- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 3 medium apples, peeled, cored, and chopped
- 1 cup fresh cranberries
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients.
- Gently fold in the chopped apples and cranberries. If using, fold in the walnuts.
- Pour the batter into the prepared pan and bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Notes
- You can substitute frozen cranberries; do not thaw them first.
- For extra flavor, add a teaspoon of cinnamon to the dry ingredients.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
