Description

A delicious and easy casserole made with rotisserie chicken, perfect for a comforting meal.


Ingredients

  • 1 rotisserie chicken, shredded
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, black beans, corn, diced tomatoes and green chilies, taco seasoning, and salsa.
  3. In a casserole dish, layer half of the tortilla chips.
  4. Top with half of the chicken mixture and half of the cheese.
  5. Repeat layers.
  6. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  7. Let stand for a few minutes before serving.

Notes

  • You can add other toppings like sour cream, guacamole, or jalapeños.
  • Feel free to use different types of cheese.
  • For a spicier dish, use hot salsa or add a pinch of cayenne pepper.
