A delicious and easy casserole made with rotisserie chicken, perfect for a comforting meal.
Ingredients

- 1 rotisserie chicken, shredded
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 packet taco seasoning
- 1 cup salsa
- 2 cups tortilla chips
- 2 cups shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, black beans, corn, diced tomatoes and green chilies, taco seasoning, and salsa.
- In a casserole dish, layer half of the tortilla chips.
- Top with half of the chicken mixture and half of the cheese.
- Repeat layers.
- Bake for 20-25 minutes, or until cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can add other toppings like sour cream, guacamole, or jalapeños.
- Feel free to use different types of cheese.
- For a spicier dish, use hot salsa or add a pinch of cayenne pepper.
