Description

A hearty and flavorful one-pot pasta dish featuring roasted butternut squash and savory sausage, perfect for a fall meal.


Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 medium butternut squash, peeled, seeded, and cubed
  • 8 ounces pasta (penne or rotini recommended)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon dried sage
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed butternut squash with a drizzle of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and lightly browned.
  3. While the squash roasts, heat a large pot or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Remove the sausage with a slotted spoon and set aside, leaving the drippings in the pot.
  4. Add the chopped onion to the pot and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the uncooked pasta, chicken broth, sage, and thyme. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the pasta is al dente and most of the liquid is absorbed, stirring occasionally.
  6. Stir in the roasted butternut squash and cooked sausage. Season with salt and pepper to taste.
  7. Serve hot, garnished with Parmesan cheese and fresh parsley if desired.

Notes

  • For a vegetarian option, omit the sausage and use vegetable broth.
  • Adjust the amount of broth based on your desired pasta consistency.
  • Add a pinch of red pepper flakes for a touch of heat.
