- 4 cups corn kernels (frozen or fresh)
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons lime juice

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- If using frozen corn, thaw and drain it. If using fresh corn, cook and cut kernels from the cob.
- In a large bowl, combine corn kernels, diced red bell pepper, chopped red onion, and chopped cilantro.
- In a small bowl, whisk together olive oil, lime juice, chili powder, salt, and black pepper.
- Pour the dressing over the corn mixture.
- Toss gently to coat all ingredients.
- Chill for at least 15 minutes before serving to allow flavors to meld.
Notes
- For a spicier salad, add a minced jalapeño.
- You can substitute other colorful bell peppers for red.
