Description

A bright and easy corn salad perfect for any gathering. This salad is a crowd-pleaser, offering a burst of fresh flavors.


Ingredients

  • 4 cups corn kernels (frozen or fresh)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. If using frozen corn, thaw and drain it. If using fresh corn, cook and cut kernels from the cob.
  2. In a large bowl, combine corn kernels, diced red bell pepper, chopped red onion, and chopped cilantro.
  3. In a small bowl, whisk together olive oil, lime juice, chili powder, salt, and black pepper.
  4. Pour the dressing over the corn mixture.
  5. Toss gently to coat all ingredients.
  6. Chill for at least 15 minutes before serving to allow flavors to meld.

Notes

  • For a spicier salad, add a minced jalapeño.
  • You can substitute other colorful bell peppers for red.
