- 1 cucumber, julienned
- 1 carrot, julienned
- 100g cooked chicken or tofu, shredded
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 1 tsp sugar
- 1/2 tsp chili flakes (optional)
- 2 green onions, chopped
Instructions
- Cook noodles according to package directions. Rinse under cold water and drain well.
- In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, and chili flakes (if using).
- In a large bowl, combine the cooked noodles, julienned cucumber, julienned carrot, and shredded chicken or tofu.
- Pour the dressing over the noodle mixture.
- Toss gently to combine.
- Garnish with chopped green onions before serving.
