Delicious and easy raspberry lemon bars.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 1/4 teaspoon salt
- 4 large eggs
- 1 1/2 cups granulated sugar
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1/4 cup all-purpose flour
- 1 cup fresh raspberries
Instructions
- Preheat oven to 350°F (175°C).
- Make the crust: Whisk together flour, powdered sugar, and salt. Cut in butter until crumbly. Press into a 9×13 inch pan. Bake for 15 minutes.
- Make the filling: Whisk eggs, sugar, lemon juice, zest, and flour.
- Pour filling over the crust.
- Gently place raspberries on top.
- Bake for 20-25 minutes.
- Let cool completely. Cut into bars.
Notes
- For best results, use fresh raspberries.
- Dust with powdered sugar before serving.
- Store in the refrigerator.
