Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/4 cup all-purpose flour
  • 1 cup fresh raspberries


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust: Whisk together flour, powdered sugar, and salt. Cut in butter until crumbly. Press into a 9×13 inch pan. Bake for 15 minutes.
  3. Make the filling: Whisk eggs, sugar, lemon juice, zest, and flour.
  4. Pour filling over the crust.
  5. Gently place raspberries on top.
  6. Bake for 20-25 minutes.
  7. Let cool completely. Cut into bars.

Notes

  • For best results, use fresh raspberries.
  • Dust with powdered sugar before serving.
