Description

Ingredients

  • 1 ½ cups graham cracker crumbs
  • 1/4 cup sugar
  • 6 tablespoons butter, melted
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ½ cups pumpkin puree
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
  3. Bake crust for 8 minutes. Let cool.
  4. Make the filling: Beat cream cheese until smooth.
  5. Add pumpkin puree, sugar, eggs, spice, and vanilla. Mix until combined.
  6. Pour filling over crust.
  7. Bake for 50-60 minutes, or until set.
  8. Cool completely.
  9. Refrigerate for at least 4 hours before serving.
