This recipe combines the best of pumpkin pie and cheesecake.

- 1 ½ cups graham cracker crumbs
- 1/4 cup sugar
- 6 tablespoons butter, melted
- 3 (8 ounce) packages cream cheese, softened
- 1 ½ cups pumpkin puree
- 1 cup sugar
- 2 large eggs
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C).
- Make the crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan.
- Bake crust for 8 minutes. Let cool.
- Make the filling: Beat cream cheese until smooth.
- Add pumpkin puree, sugar, eggs, spice, and vanilla. Mix until combined.
- Pour filling over crust.
- Bake for 50-60 minutes, or until set.
- Cool completely.
- Refrigerate for at least 4 hours before serving.
Notes
- You can add whipped cream on top.
- Adjust the spices to your liking.
- Make sure your cream cheese is softened.
