- 6 large eggs
- 1/4 cup milk
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cups cooked potatoes, diced
- 4 slices bacon, cooked and crumbled
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F (190°C).
- Whisk eggs, milk, salt, and pepper.
- Heat olive oil in an oven-safe skillet.
- Sauté onion until softened.
- Add potatoes and bacon. Cook briefly.
- Pour egg mixture over the potatoes.
- Sprinkle with cheese.
- Bake for 20-25 minutes, or until set.
- Let cool slightly before serving.
Notes
- You can use any type of cooked potatoes.
- Add other vegetables like bell peppers or mushrooms.
- Feel free to use different cheeses.
