- 1/4 cup crushed pineapple, drained
- 1/2 cup chopped pecans, divided
- 1/4 cup chopped candied cherries (optional)
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Crackers or fruit for serving
Instructions
- In a medium bowl, beat the softened cream cheese until smooth.
- Stir in the crushed pineapple, 1/4 cup of the chopped pecans, candied cherries (if using), salt, and pepper.
- Mix well until all ingredients are combined.
- Shape the mixture into a ball.
- Roll the cheese ball in the remaining 1/4 cup of chopped pecans, pressing gently to coat.
- Wrap the cheese ball tightly in plastic wrap.
- Refrigerate for at least 1 hour to allow it to firm up.
- Serve with crackers or fruit.
Notes
- For a sweeter cheese ball, increase the amount of crushed pineapple slightly.
- If you don’t have candied cherries, you can omit them or use dried cranberries.
