Instructions
- Cook and shred the chicken breast.
- Dice the red onion. Chop the cilantro.
- Combine pineapple, red onion, cilantro, lime juice, olive oil, salt, and pepper in a bowl.
- Mix the chicken with the pineapple mixture.
- Warm the taco shells.
- Fill the taco shells with the chicken mixture.
