Instructions
- Preheat oven to 400°F (200°C). Grease a 8×8 inch baking dish.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, egg, and melted butter.
- Add wet ingredients to dry ingredients. Stir until just combined. Do not overmix.
- Pour batter into prepared dish.
- Bake for 20-25 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
- For a richer flavor, use brown butter.
- You can add a can of creamed corn for extra moisture.
