- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup broccoli florets
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the vegetables with olive oil, Italian seasoning, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Roast for 20 minutes.
- Sprinkle with Parmesan cheese and roast for another 5-10 minutes, or until the vegetables are tender and the cheese is melted and golden.
- Serve immediately.
