This recipe transforms leftover turkey into a comforting and easy oven-baked meal with rice.


Ingredients

  • 2 cups cooked turkey, shredded
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped carrots
  • 1/4 cup chopped celery
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion, carrots, and celery in olive oil until softened.
  3. Add rice and toast for 1 minute.
  4. Pour in chicken broth and water. Season with thyme, salt, and pepper.
  5. Stir in shredded turkey.
  6. Cover and bake for 30-35 minutes, or until rice is cooked and liquid is absorbed.
  7. Fluff with a fork and serve.
