- 2 cups cooked turkey, shredded
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 cup water
- 1/2 cup chopped onion
- 1/2 cup chopped carrots
- 1/4 cup chopped celery
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- Sauté onion, carrots, and celery in olive oil until softened.
- Add rice and toast for 1 minute.
- Pour in chicken broth and water. Season with thyme, salt, and pepper.
- Stir in shredded turkey.
- Cover and bake for 30-35 minutes, or until rice is cooked and liquid is absorbed.
- Fluff with a fork and serve.
Notes
- You can add other vegetables like peas or corn.
- Adjust seasoning to your taste.
- Leftovers can be stored in the refrigerator for up to 3 days.
