Description

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, cilantro


Instructions

  1. Brown ground beef in a pot. Drain any excess grease.
  2. Add onion and bell pepper. Cook until softened.
  3. Stir in diced tomatoes, rice, beef broth, chili powder, and cumin.
  4. Season with salt and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
  6. Let stand for 5 minutes before serving.
