A quick and easy one-pot meal with Tex-Mex flavors.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 cup long-grain rice
- 2 cups beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, cilantro
Instructions
- Brown ground beef in a pot. Drain any excess grease.
- Add onion and bell pepper. Cook until softened.
- Stir in diced tomatoes, rice, beef broth, chili powder, and cumin.
- Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until rice is cooked.
- Let stand for 5 minutes before serving.
- Top with your favorite Tex-Mex toppings.
