Description
A simple one-pot meal with creamy chicken and potatoes.
Ingredients
- Chicken thighs: 1.5 lbs
- Potatoes: 1.5 lbs, cubed
- Chicken broth: 4 cups
- Heavy cream: 1 cup
- Onion: 1, chopped
- Garlic: 2 cloves, minced
- Olive oil: 2 tbsp
- Salt and pepper: To taste
- Dried thyme: 1 tsp
- Bay leaf: 1
Instructions
- Heat olive oil in a large pot.
- Season chicken with salt and pepper.
- Sear chicken until browned. Remove and set aside.
- Add onion to the pot and cook until softened.
- Add garlic, cook for 1 minute.
- Add potatoes, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Return chicken to the pot.
- Stir in heavy cream.
- Simmer until chicken is cooked through and potatoes are tender.
- Season to taste.
Notes
- You can add vegetables like carrots or celery.
- Adjust seasonings to your liking.
