Description

A simple one-pot meal with creamy chicken and potatoes.


Ingredients

  • Chicken thighs: 1.5 lbs
  • Potatoes: 1.5 lbs, cubed
  • Chicken broth: 4 cups
  • Heavy cream: 1 cup
  • Onion: 1, chopped
  • Garlic: 2 cloves, minced
  • Olive oil: 2 tbsp
  • Salt and pepper: To taste
  • Dried thyme: 1 tsp
  • Bay leaf: 1


Instructions

  1. Heat olive oil in a large pot.
  2. Season chicken with salt and pepper.
  3. Sear chicken until browned. Remove and set aside.
  4. Add onion to the pot and cook until softened.
  5. Add garlic, cook for 1 minute.
  6. Add potatoes, chicken broth, thyme, and bay leaf.
  7. Bring to a boil, then reduce heat and simmer for 15 minutes.
  8. Return chicken to the pot.
  9. Stir in heavy cream.
  10. Simmer until chicken is cooked through and potatoes are tender.
  11. Season to taste.
