Instructions

  1. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook until golden and cooked through, about 5–6 minutes. Remove from skillet and set aside.
  2. Scramble the Eggs: In the same skillet, add a touch of oil if needed. Pour in beaten eggs and scramble quickly until just set. Remove and keep with chicken.
  3. Sauté Vegetables: Add the remaining oil to the skillet, then stir in garlic, peas, and carrots. Cook for 2–3 minutes until tender.
  4. Add Rice: Stir in cold cooked rice, breaking up clumps as you go. Let it fry for 2–3 minutes to crisp slightly.
  5. Combine Everything: Return chicken and eggs to the skillet. Pour in soy sauce and sesame oil, tossing to coat evenly. Season with salt and pepper to taste.
  6. Finish and Serve: Garnish with green onions. Serve hot as a complete one pot meal.

Notes

For best texture, always use cold, day-old rice. Avoid adding too much soy sauce at once to prevent sogginess. You can swap chicken for shrimp, beef, or tofu for a variation on skillet chicken rice. For extra flavor, add a dash of chili flakes or sriracha.
