Ingredients
- 2 tablespoons vegetable oil (divided)
- 1 pound boneless chicken breast or thighs, diced
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots
- 3 green onions, chopped
- 3 large eggs, lightly beaten
- 4 cups cooked cold jasmine or long-grain white rice
- 3 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon sesame oil
- Salt and pepper, to taste
Instructions
- Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add diced chicken and cook until golden and cooked through, about 5–6 minutes. Remove from skillet and set aside.
- Scramble the Eggs: In the same skillet, add a touch of oil if needed. Pour in beaten eggs and scramble quickly until just set. Remove and keep with chicken.

- Combine Everything: Return chicken and eggs to the skillet. Pour in soy sauce and sesame oil, tossing to coat evenly. Season with salt and pepper to taste.
- Finish and Serve: Garnish with green onions. Serve hot as a complete one pot meal.
