This one-pan creamy Tuscan chicken is a flavorful and easy meal.
Ingredients

- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large pan.
- Sear chicken until browned. Remove and set aside.
- Sauté onion until softened. Add garlic and sun-dried tomatoes.
- Pour in chicken broth and cream. Simmer.
- Stir in Parmesan cheese.
- Return chicken to the pan.
- Cook until chicken is cooked through.
- Garnish with basil.
Notes
- You can add spinach for extra vegetables.
- Serve with pasta or crusty bread.
