Description

This one-pan creamy Tuscan chicken is a flavorful and easy meal.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large pan.
  3. Sear chicken until browned. Remove and set aside.
  4. Sauté onion until softened. Add garlic and sun-dried tomatoes.
  5. Pour in chicken broth and cream. Simmer.
  6. Stir in Parmesan cheese.
  7. Return chicken to the pan.
  8. Cook until chicken is cooked through.
  9. Garnish with basil.

Notes

  • You can add spinach for extra vegetables.
  • Serve with pasta or crusty bread.
