- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon Cajun seasoning (mild)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 8 ounces pasta (rotini or penne work well)
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken with Cajun seasoning, salt, and pepper.
- Heat olive oil in a large pan or skillet over medium-high heat.
- Add the chicken and cook until browned on all sides.
- Add the onion and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
- Pour in chicken broth and add the pasta.
- Bring to a boil, then reduce heat and simmer, covered, until the pasta is cooked, about 12-15 minutes. Stir occasionally to prevent sticking.
- Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Simmer for a few minutes until the sauce has thickened.
- Garnish with fresh parsley before serving.
