Description

A simple and delicious one-pan meal featuring tender chicken and savory buttered noodles, perfect for a quick weeknight dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 8 oz egg noodles
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional: fresh parsley, chopped, for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Season chicken pieces with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add butter to the skillet and let it melt. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add egg noodles and chicken broth to the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  6. Return the chicken to the skillet. Cover the skillet and transfer it to the preheated oven.
  7. Bake for 15-20 minutes, or until noodles are tender and chicken is cooked through.
  8. Remove from oven. Stir in heavy cream and Parmesan cheese until well combined and sauce thickens slightly.
  9. Season with additional salt and pepper if needed. Garnish with fresh parsley if desired.
  10. Serve hot directly from the skillet.

  • For a richer flavor, use chicken thighs instead of breasts.
  • Adjust the amount of chicken broth based on noodle type and desired sauciness.
  • Feel free to add other vegetables like peas or spinach in the last 5 minutes of baking.
