- 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 8 oz egg noodles
- 2 tbsp butter
- 1 tbsp olive oil
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- Salt and black pepper to taste
- Optional: fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season chicken pieces with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add butter to the skillet and let it melt. Add minced garlic and cook for 30 seconds until fragrant.
- Add egg noodles and chicken broth to the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
- Return the chicken to the skillet. Cover the skillet and transfer it to the preheated oven.
- Bake for 15-20 minutes, or until noodles are tender and chicken is cooked through.
- Remove from oven. Stir in heavy cream and Parmesan cheese until well combined and sauce thickens slightly.
- Season with additional salt and pepper if needed. Garnish with fresh parsley if desired.
- Serve hot directly from the skillet.
Notes
- For a richer flavor, use chicken thighs instead of breasts.
- Adjust the amount of chicken broth based on noodle type and desired sauciness.
- Feel free to add other vegetables like peas or spinach in the last 5 minutes of baking.
