A simple one-pan meal perfect for busy weeknights. This recipe combines beef and beans for a hearty and satisfying dinner.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 packet taco seasoning
  • 1 cup beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado


Instructions

  1. Brown the ground beef in a large oven-safe skillet over medium-high heat. Drain off any excess grease.
  2. Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in the kidney beans, diced tomatoes, taco seasoning, and beef broth. Season with salt and pepper.
  4. Bring to a simmer, then reduce heat and cover the skillet.
  5. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the sauce has thickened.
  6. Remove from the oven and let it cool for a few minutes.
  7. Serve hot with your favorite toppings.

Notes

  • You can substitute ground turkey or chicken for the ground beef.
  • Add a can of corn for extra flavor.
