- 1 lb ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can diced tomatoes, undrained
- 1 packet taco seasoning
- 1 cup beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado
Instructions
- Brown the ground beef in a large oven-safe skillet over medium-high heat. Drain off any excess grease.
- Add the onion and bell pepper to the skillet and cook until softened, about 5 minutes.
- Stir in the kidney beans, diced tomatoes, taco seasoning, and beef broth. Season with salt and pepper.
- Bring to a simmer, then reduce heat and cover the skillet.
- Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the sauce has thickened.
- Remove from the oven and let it cool for a few minutes.
- Serve hot with your favorite toppings.
Notes
- You can substitute ground turkey or chicken for the ground beef.
- Add a can of corn for extra flavor.
- Feel free to add other vegetables like zucchini or mushrooms.
