Ingredients
- Chicken pieces: 4
- Rice: 1 cup
- Mixed vegetables: 2 cups
- Chicken broth: 2 cups
- Olive oil: 1 tbsp
- Salt: to taste
- Pepper: to taste
- Italian seasoning: 1 tsp
Instructions
- Preheat oven to 375°F (190°C).
- Toss chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in an oven-safe dish.
- Brown chicken on all sides.
- Add rice and vegetables to the dish.
- Pour in chicken broth.
- Cover and bake for 30 minutes.
- Uncover and bake for another 15 minutes, or until rice is cooked and chicken is done.
Notes
- Adjust vegetables based on your preference.
- You can use boneless, skinless chicken if you like.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
