Ingredients

  • Chicken pieces: 4
  • Rice: 1 cup
  • Mixed vegetables: 2 cups
  • Chicken broth: 2 cups
  • Olive oil: 1 tbsp
  • Salt: to taste
  • Pepper: to taste
  • Italian seasoning: 1 tsp


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in an oven-safe dish.
  4. Brown chicken on all sides.
  5. Add rice and vegetables to the dish.
  6. Pour in chicken broth.
  7. Cover and bake for 30 minutes.
  8. Uncover and bake for another 15 minutes, or until rice is cooked and chicken is done.

  • You can use boneless, skinless chicken if you like.
