Description
A simple one-dish chicken casserole, perfect for a weeknight meal.
Ingredients
- Chicken breasts (4)
- Mixed vegetables (2 cups)
- Cream of mushroom soup (1 can)
- Cooked rice (2 cups)
- Cheddar cheese (1 cup, shredded)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Place chicken breasts in a baking dish.
- Season with salt and pepper.
- Top with mixed vegetables and cream of mushroom soup.
- Cover and bake for 30 minutes.
- Remove cover, add cooked rice.
- Top with cheese.
- Bake uncovered for 15 more minutes, or until chicken is cooked and cheese is melted.
- Let stand for a few minutes before serving.
Notes
- You can substitute cream of chicken soup.
- Add different vegetables as you like.
- Serve with a side salad.
