Description

A simple one-dish chicken casserole, perfect for a weeknight meal.


Ingredients

  • Chicken breasts (4)
  • Mixed vegetables (2 cups)
  • Cream of mushroom soup (1 can)
  • Cooked rice (2 cups)
  • Cheddar cheese (1 cup, shredded)
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place chicken breasts in a baking dish.
  3. Season with salt and pepper.
  4. Top with mixed vegetables and cream of mushroom soup.
  5. Cover and bake for 30 minutes.
  6. Remove cover, add cooked rice.
  7. Top with cheese.
  8. Bake uncovered for 15 more minutes, or until chicken is cooked and cheese is melted.
  9. Let stand for a few minutes before serving.

Notes

  • You can substitute cream of chicken soup.
  • Add different vegetables as you like.
  • Serve with a side salad.
