Description

Ingredients

  • 1 1/2 cups rolled oats
  • 1 cup boiling water
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Brown Sugar Glaze:

  • 1/2 cup packed brown sugar
  • 1/4 cup milk
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Pour boiling water over oats; let stand for 10 minutes.
  3. In a bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in eggs one at a time, then stir in vanilla.
  6. Gradually add dry ingredients to wet ingredients, alternating with the oat mixture, beginning and ending with the dry ingredients.
  7. Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. While cake is baking, prepare the glaze: In a saucepan, combine brown sugar, milk, and butter. Bring to a boil, then reduce heat and simmer for 1 minute. Remove from heat and stir in vanilla.
  9. Gradually whisk in powdered sugar until smooth.
  10. Let cake cool slightly before drizzling with glaze.

Notes

  • You can add chopped nuts or raisins to the batter for extra flavor and texture.
  • For a richer flavor, use brown butter in the cake.
  • Store leftover cake in an airtight container at room temperature.
