- 1 1/2 cups rolled oats
- 1 cup boiling water
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Brown Sugar Glaze:
- 1/2 cup packed brown sugar
- 1/4 cup milk
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Pour boiling water over oats; let stand for 10 minutes.
- In a bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients to wet ingredients, alternating with the oat mixture, beginning and ending with the dry ingredients.
- Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- While cake is baking, prepare the glaze: In a saucepan, combine brown sugar, milk, and butter. Bring to a boil, then reduce heat and simmer for 1 minute. Remove from heat and stir in vanilla.
- Gradually whisk in powdered sugar until smooth.
- Let cake cool slightly before drizzling with glaze.
Notes
- You can add chopped nuts or raisins to the batter for extra flavor and texture.
- For a richer flavor, use brown butter in the cake.
- Store leftover cake in an airtight container at room temperature.
