Description

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1.5 lbs ground beef
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 2 lbs potatoes, peeled and quartered
  • 0.5 cup milk
  • 0.25 cup butter
  • 0.5 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Add ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess fat.
  4. Season the beef with salt and pepper. Sprinkle flour over the beef and stir to coat. Cook for 1 minute.
  5. Pour in beef broth and Worcestershire sauce. Bring to a simmer, stirring to scrape up any browned bits from the bottom of the skillet. Stir in thyme.
  6. Reduce heat and let the mixture simmer for 10 minutes, or until the sauce has thickened.
  7. While the beef mixture simmers, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  8. Mash the potatoes with milk and butter until smooth and creamy. Season with salt and pepper to taste.
  9. If using cheese, stir it into the mashed potatoes.
  10. Spread the mashed potato topping evenly over the beef mixture in the skillet. You can create decorative peaks with a fork if desired.
  11. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
  12. Let stand for 5-10 minutes before serving.

  • For a richer flavor, you can add a splash of red wine to the beef mixture.
  • You can substitute lamb for beef to make a traditional shepherd’s pie.
