A classic and comforting homemade shepherd’s pie with a rich beef filling and a creamy mashed potato topping.

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1.5 lbs ground beef
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 tablespoons all-purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 2 lbs potatoes, peeled and quartered
- 0.5 cup milk
- 0.25 cup butter
- 0.5 cup shredded cheddar cheese (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess fat.
- Season the beef with salt and pepper. Sprinkle flour over the beef and stir to coat. Cook for 1 minute.
- Pour in beef broth and Worcestershire sauce. Bring to a simmer, stirring to scrape up any browned bits from the bottom of the skillet. Stir in thyme.
- Reduce heat and let the mixture simmer for 10 minutes, or until the sauce has thickened.
- While the beef mixture simmers, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash the potatoes with milk and butter until smooth and creamy. Season with salt and pepper to taste.
- If using cheese, stir it into the mashed potatoes.
- Spread the mashed potato topping evenly over the beef mixture in the skillet. You can create decorative peaks with a fork if desired.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
- Let stand for 5-10 minutes before serving.
Notes
- For a richer flavor, you can add a splash of red wine to the beef mixture.
- You can substitute lamb for beef to make a traditional shepherd’s pie.
- Add frozen peas or corn to the beef filling for extra vegetables.
