Ingredients
Scale
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 2/3 cup pumpkin puree
- 1 teaspoon vanilla extract
- 16 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
Instructions
- Preheat your oven to 375°F (190°C). Line a 10×15 inch jelly roll pan with parchment paper and grease it.
- In a medium bowl, whisk together flour, cinnamon, ginger, nutmeg, cloves, baking soda, and salt. Set aside.
- In a large bowl, beat eggs and granulated sugar until light and fluffy. Beat in pumpkin puree and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter evenly into the prepared pan. Bake for 13-15 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the filling. In a medium bowl, beat softened cream cheese with powdered sugar, vanilla extract, cinnamon, and nutmeg until smooth.
- As soon as the cake comes out of the oven, invert it onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
- Starting from one of the short ends, tightly roll up the warm cake and the towel together. Let it cool completely on a wire rack.
- Once cooled, unroll the cake. Spread the cream cheese filling evenly over the cake.
- Roll up the cake again, this time without the towel.
- Wrap the rolled cake tightly in plastic wrap and refrigerate for at least 1 hour before slicing and serving.
Notes
- Ensure cream cheese is at room temperature for a smooth filling.
- Do not overbake the cake, as it needs to be pliable for rolling.
- For extra flavor, you can add chopped pecans to the cream cheese filling.
