Description

A simple and delicious moist lemon loaf cake with a zesty glaze. No mixer required.


Ingredients

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon lemon extract
  • ½ cup milk
  • Zest of 2 lemons
  • For the Glaze: 1 cup powdered sugar, 3 tablespoons lemon juice


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together sugar and butter.
  4. Beat in eggs one at a time, then stir in lemon extract.
  5. Gradually add the dry ingredients and milk, alternating and ending with the dry ingredients.
  6. Stir in lemon zest.
  7. Pour batter into the prepared pan and bake for 50-60 minutes.
  8. Let the cake cool.
  9. Make the glaze: Whisk powdered sugar and lemon juice.
  10. Pour glaze over cooled cake.
