- 1 package (14.1 ounces) refrigerated pie crusts
- 1 cup lemon curd
- Meringue (recipe below)
Instructions
- Preheat your oven to 375°F (190°C).
- Unroll the pie crusts.
- Use a flower-shaped cookie cutter to cut out shapes.
- Gently press the crusts into mini tart pans.
- Fill each tart with lemon curd.
- Bake for 12-15 minutes, or until the crusts are golden.
- Let the tarts cool.
- Top with meringue.
- Use a kitchen torch to lightly brown the meringue.
- Serve and enjoy!
