A refreshing and flavorful Mexican Pasta Salad with black beans.
Ingredients

- 1 pound pasta
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup corn
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped cilantro
- 1/2 cup Mexican crema or sour cream
- 1/4 cup lime juice
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, black beans, corn, bell pepper, red onion, and tomatoes.
- In a small bowl, whisk together crema or sour cream, lime juice, olive oil, chili powder, and cumin. Season with salt and pepper.
- Pour dressing over pasta salad and toss to combine.
- Stir in cilantro.
- Refrigerate for at least 30 minutes before serving.
Notes
- You can add cooked chicken for protein.
- Adjust the amount of chili powder to your taste.
- Feel free to add other vegetables like avocado.
