Description

A refreshing and flavorful Mexican Pasta Salad with black beans.


Ingredients

  • 1 pound pasta
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup chopped cilantro
  • 1/2 cup Mexican crema or sour cream
  • 1/4 cup lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, black beans, corn, bell pepper, red onion, and tomatoes.
  3. In a small bowl, whisk together crema or sour cream, lime juice, olive oil, chili powder, and cumin. Season with salt and pepper.
  4. Pour dressing over pasta salad and toss to combine.
  5. Stir in cilantro.
  6. Refrigerate for at least 30 minutes before serving.

Notes

  • You can add cooked chicken for protein.
