Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, avocado, salsa
Instructions
- Brown ground beef in a skillet. Drain any excess grease.
- Add onion and bell pepper; cook until softened.
- Stir in diced tomatoes, black beans, and taco seasoning.
- Simmer for 10 minutes.
- Pour mixture into a baking dish.
- Top with cheddar cheese.
- Bake at 375°F (190°C) for 20 minutes, or until cheese is melted and bubbly.
- Serve with your favorite toppings.
Notes
- You can add other vegetables, like corn or zucchini.
- For a spicier dish, use hot taco seasoning.
