Description

A flavorful, low-carb Mexican-inspired bake featuring ground beef and vegetables.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • Optional toppings: sour cream, avocado, salsa


Instructions

  1. Brown ground beef in a skillet. Drain any excess grease.
  2. Add onion and bell pepper; cook until softened.
  3. Stir in diced tomatoes, black beans, and taco seasoning.
  4. Simmer for 10 minutes.
  5. Pour mixture into a baking dish.
  6. Top with cheddar cheese.
  7. Bake at 375°F (190°C) for 20 minutes, or until cheese is melted and bubbly.
  8. Serve with your favorite toppings.
