Ingredients

  • Gluten-Free Rolled Oats: 1 cup
  • Pecan Flour: 1/2 cup
  • Maple Syrup: 1/2 cup
  • Coconut Oil: 1/4 cup, melted
  • Egg: 1, large
  • Vanilla Extract: 1 teaspoon
  • Baking Soda: 1/2 teaspoon
  • Salt: a pinch
  • Pecans: 1/4 cup, chopped


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix oats, pecan flour, baking soda, and salt.
  3. In another bowl, whisk together maple syrup, melted coconut oil, egg, and vanilla.
  4. Combine wet and dry ingredients. Stir in chopped pecans.
  5. Drop spoonfuls onto a baking sheet.
  6. Bake for 10-12 minutes.
  7. Let cool before enjoying.
