Ingredients
- Gluten-Free Rolled Oats: 1 cup
- Pecan Flour: 1/2 cup
- Maple Syrup: 1/2 cup
- Coconut Oil: 1/4 cup, melted
- Egg: 1, large
- Vanilla Extract: 1 teaspoon
- Baking Soda: 1/2 teaspoon
- Salt: a pinch
- Pecans: 1/4 cup, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix oats, pecan flour, baking soda, and salt.
- In another bowl, whisk together maple syrup, melted coconut oil, egg, and vanilla.
- Combine wet and dry ingredients. Stir in chopped pecans.
- Drop spoonfuls onto a baking sheet.
- Bake for 10-12 minutes.
- Let cool before enjoying.

- For extra flavor, add a pinch of cinnamon.
