- 1.5 lbs boneless, skinless chicken thighs
- 1.5 lbs sweet potatoes, peeled and cubed
- 2 tablespoons olive oil
- 2 tablespoons Dijon mustard
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- Salt, to taste
- Black pepper, to taste
- Optional: fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Toss sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
- While sweet potatoes roast, prepare the chicken. In a bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, garlic powder, salt, and pepper.
- Add chicken thighs to the bowl and toss to coat evenly.
- Once sweet potatoes are almost done, add the coated chicken to the same baking sheet, arranging in a single layer.
- Return the baking sheet to the oven and bake for another 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Serve the maple Dijon chicken and roasted sweet potatoes in bowls. Garnish with fresh parsley if desired.
Notes
- Adjust maple syrup for desired sweetness.
- Feel free to add other vegetables like broccoli or Brussels sprouts to the roasting pan.
