Description

A simple and healthy meal featuring tender maple Dijon chicken served over roasted sweet potatoes, perfect for a quick and clean fall dinner.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1.5 lbs sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 2 tablespoons Dijon mustard
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Optional: fresh parsley, chopped, for garnish


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss sweet potato cubes with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, or until tender and slightly caramelized.
  3. While sweet potatoes roast, prepare the chicken. In a bowl, whisk together Dijon mustard, maple syrup, apple cider vinegar, garlic powder, salt, and pepper.
  4. Add chicken thighs to the bowl and toss to coat evenly.
  5. Once sweet potatoes are almost done, add the coated chicken to the same baking sheet, arranging in a single layer.
  6. Return the baking sheet to the oven and bake for another 15-20 minutes, or until chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Serve the maple Dijon chicken and roasted sweet potatoes in bowls. Garnish with fresh parsley if desired.

  • Feel free to add other vegetables like broccoli or Brussels sprouts to the roasting pan.
