Description

Creamy mashed sweet potatoes baked with a sweet marshmallow topping. Perfect for making ahead for holidays.


Ingredients

Scale
  • 2 pounds sweet potatoes, peeled and cubed
  • 1/2 cup butter, melted
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup mini marshmallows


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Boil or steam the sweet potato cubes until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and return them to the pot.
  4. Mash the sweet potatoes with melted butter, milk, salt, and pepper until smooth.
  5. Pour the mashed sweet potatoes into a baking dish.
  6. Spread the mini marshmallows evenly over the top.
  7. Bake for 15-20 minutes, or until the marshmallows are golden brown and bubbly.
  8. Let cool slightly before serving.

Notes

  • For make-ahead, prepare the mashed sweet potatoes and refrigerate. Add marshmallows and bake just before serving.
  • Add a pinch of cinnamon or nutmeg for extra flavor.
