- 2 pounds sweet potatoes, peeled and cubed
- 1/2 cup butter, melted
- 1/4 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup mini marshmallows
Instructions
- Preheat your oven to 375°F (190°C).
- Boil or steam the sweet potato cubes until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot.
- Mash the sweet potatoes with melted butter, milk, salt, and pepper until smooth.
- Pour the mashed sweet potatoes into a baking dish.
- Spread the mini marshmallows evenly over the top.
- Bake for 15-20 minutes, or until the marshmallows are golden brown and bubbly.
- Let cool slightly before serving.
Notes
- For make-ahead, prepare the mashed sweet potatoes and refrigerate. Add marshmallows and bake just before serving.
- Add a pinch of cinnamon or nutmeg for extra flavor.
- Use regular marshmallows or large ones cut into pieces.
