- 2 lbs boneless, skinless chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Optional: Your favorite low-carb vegetables (broccoli, cauliflower, etc.)
Instructions
- Place chicken breasts in the crockpot.
- Add chopped onion and minced garlic.
- Pour in chicken broth.
- Season with salt, pepper, paprika, and garlic powder.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken with two forks.
- Add optional vegetables during the last hour of cooking.
- Serve and enjoy!
