Description

A delicious and easy low-carb chicken and broccoli casserole.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 4 cups broccoli florets, steamed
  • 1 cup cheddar cheese, shredded
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine chicken, broccoli, and half of the cheddar cheese.
  3. In a separate bowl, whisk together heavy cream, cream cheese, chicken broth, and garlic powder. Season with salt and pepper.
  4. Pour the cream sauce over the chicken and broccoli mixture. Stir to combine.
  5. Transfer the mixture to a baking dish.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let it cool slightly before serving.

Notes

  • You can add other vegetables, like cauliflower or mushrooms.
  • For extra flavor, add a pinch of red pepper flakes.
  • Use rotisserie chicken to save time.
