A delicious and easy low-carb chicken and broccoli casserole.
Ingredients

- 2 cups cooked chicken, shredded
- 4 cups broccoli florets, steamed
- 1 cup cheddar cheese, shredded
- 1/2 cup heavy cream
- 1/4 cup cream cheese
- 1/4 cup chicken broth
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine chicken, broccoli, and half of the cheddar cheese.
- In a separate bowl, whisk together heavy cream, cream cheese, chicken broth, and garlic powder. Season with salt and pepper.
- Pour the cream sauce over the chicken and broccoli mixture. Stir to combine.
- Transfer the mixture to a baking dish.
- Sprinkle the remaining cheddar cheese on top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
- You can add other vegetables, like cauliflower or mushrooms.
- For extra flavor, add a pinch of red pepper flakes.
- Use rotisserie chicken to save time.
