Description

Ingredients

Scale
  • 200g active sourdough starter
  • 300g bread flour
  • 100g whole wheat flour
  • 280g water
  • 10g salt
  • zest of 1 lemon
  • 1 cup fresh blueberries


Instructions

  1. In a bowl, mix starter, water, and lemon zest.
  2. Add flours and mix until a shaggy dough forms.
  3. Let it rest for 30 minutes (autolyse).
  4. Add salt and knead for 5 minutes.
  5. Fold in blueberries gently.
  6. Bulk ferment for 4-6 hours with folds every 30 minutes for the first 2 hours.
  7. Shape the dough.
  8. Proof in the refrigerator for 12-18 hours.
  9. Bake at 450°F (232°C) for 20 minutes with the lid on.
  10. Remove the lid and bake for another 25-30 minutes.
  11. Let cool completely before slicing.

  • Use fresh, not frozen, blueberries.
  • Adjust baking time based on your oven.
