Ingredients

- 200g active sourdough starter
- 300g bread flour
- 100g whole wheat flour
- 280g water
- 10g salt
- zest of 1 lemon
- 1 cup fresh blueberries
Instructions
- In a bowl, mix starter, water, and lemon zest.
- Add flours and mix until a shaggy dough forms.
- Let it rest for 30 minutes (autolyse).
- Add salt and knead for 5 minutes.
- Fold in blueberries gently.
- Bulk ferment for 4-6 hours with folds every 30 minutes for the first 2 hours.
- Shape the dough.
- Proof in the refrigerator for 12-18 hours.
- Bake at 450°F (232°C) for 20 minutes with the lid on.
- Remove the lid and bake for another 25-30 minutes.
- Let cool completely before slicing.
Notes
- Use fresh, not frozen, blueberries.
- Adjust baking time based on your oven.
