Description

A delicious lemon blueberry cake.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 1 cup fresh blueberries
  • Zest of 1 lemon


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  6. Gently fold in blueberries and lemon zest.
  7. Pour batter into the prepared pan.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let cool completely before frosting.

Notes

  • You can use frozen blueberries, but don’t thaw them.
  • For a tangier cake, add more lemon zest.
  • A simple glaze can be used instead of frosting.
