Description

A delicious and easy lemon blueberry bread with a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/4 cup lemon juice
  • 1 cup fresh blueberries
  • For the Glaze: 1 cup powdered sugar, 2-3 tablespoons lemon juice


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, cream together sugar and butter. Beat in eggs and vanilla.
  4. In a small bowl, combine milk and lemon juice.
  5. Gradually add dry ingredients to wet ingredients, alternating with milk mixture.
  6. Gently fold in blueberries.
  7. Pour batter into the prepared pan.
  8. Bake for 50-60 minutes, or until a toothpick comes out clean.
  9. Let cool in pan for 10 minutes before transferring to a wire rack.
  10. Make glaze: Whisk powdered sugar and lemon juice until smooth.
  11. Drizzle glaze over cooled bread.

Notes

  • You can use frozen blueberries; do not thaw.
  • For a richer flavor, add lemon zest.
