Description

Ingredients

  • 1.5 lbs turkey breast
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups cooked quinoa
  • 2 cups chopped broccoli
  • 1/4 cup dried cranberries
  • 1/4 cup chopped pecans


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Season turkey with salt, pepper.
  3. Heat olive oil in a pan, sear turkey.
  4. Place turkey in a baking dish.
  5. Add chopped vegetables around turkey.
  6. Bake for 45-60 minutes, until turkey is cooked.
  7. Let turkey rest, then slice.
  8. Assemble bowls with quinoa, turkey, vegetables, cranberries, and pecans.
