Ingredients

- 1.5 lbs turkey breast
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups cooked quinoa
- 2 cups chopped broccoli
- 1/4 cup dried cranberries
- 1/4 cup chopped pecans
Instructions
- Preheat oven to 375°F (190°C).
- Season turkey with salt, pepper.
- Heat olive oil in a pan, sear turkey.
- Place turkey in a baking dish.
- Add chopped vegetables around turkey.
- Bake for 45-60 minutes, until turkey is cooked.
- Let turkey rest, then slice.
- Assemble bowls with quinoa, turkey, vegetables, cranberries, and pecans.
