Ingredients

  • 1 whole chicken (about 3-4 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon dried herbs (rosemary, thyme, oregano)

  • 1 onion, quartered
  • 2 carrots, chopped
  • 2 celery stalks, chopped


Instructions

  1. Preheat your oven to 400°F (200°C).
