- 2 tablespoons olive oil

- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the chicken and pat it dry.
- Rub the chicken with olive oil, salt, pepper, and herbs.
- Place the onion, carrots, and celery in a roasting pan.
- Place the chicken on top of the vegetables.
- Roast for 60-70 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving.
