Instructions

- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Chill dough for at least 30 minutes.
- Meanwhile, prepare the filling: Combine melted butter, brown sugar, and cinnamon in a small bowl.
- Roll out half of the chilled dough into a rectangle (about 12×8 inches).
- Spread half of the cinnamon-sugar mixture evenly over the dough.
- Roll up the dough tightly from the long side to form a log.
- Slice the log into 1/2-inch thick rounds.
- Repeat with the remaining dough and filling.
- Place cookies on baking sheets lined with parchment paper, leaving some space between them.
- Bake at 375°F (190°C) for 9-11 minutes, or until edges are lightly golden.
- Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
- Prepare the glaze: Whisk together powdered sugar, milk, and vanilla extract until smooth.
- Drizzle glaze over cooled cookies.
