  • 4 ounces bacon, diced
  • 1 cup diced cooked potatoes
  • 1/2 cup shredded Gruyere cheese


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a medium bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and pepper until well combined.
  3. Heat the olive oil in an oven-safe skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
