- 4 ounces bacon, diced
- 1 cup diced cooked potatoes
- 1/2 cup shredded Gruyere cheese
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and pepper until well combined.
- Heat the olive oil in an oven-safe skillet over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the skillet.
- Add the diced cooked potatoes to the skillet and cook for 5-7 minutes, until lightly browned and heated through.
- Pour the egg mixture evenly over the potatoes in the skillet. Sprinkle the cooked bacon and shredded Gruyere cheese over the top.
- Cook on the stovetop for 2-3 minutes, until the edges begin to set.
- Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden brown.
- Let the frittata cool for a few minutes before slicing and serving.
