Ingredients

- Olive oil
- Salt and pepper

- Carrots, chopped
- Celery, chopped
- Chicken broth

Instructions
- Preheat oven to 375°F (190°C).
- Season turkey breast with salt, pepper, and olive oil.
- Place chopped vegetables in a roasting pan.
- Place turkey breast on top of vegetables.
- Add chicken broth and herbs to the pan.
- Roast for 60-75 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing and serving.
