These Pecan Pie Cookies capture the rich, comforting flavors of classic pecan pie in a delightful cookie form. They are easy to make and perfect for holidays or any time you crave a sweet, nutty treat.

Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups chopped pecans, divided
  • 1/4 cup light corn syrup
  • 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in 1 cup of the chopped pecans.
  7. In a small bowl, whisk together the corn syrup and melted butter.
  8. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  9. Gently press a small amount of the corn syrup mixture onto the top of each cookie.
  10. Sprinkle the remaining 1/2 cup of chopped pecans over the tops of the cookies.
  11. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set.
  12. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a chewier cookie, slightly underbake them.
  • Ensure your butter is truly softened for the best texture.
  • You can toast the pecans lightly before chopping for a deeper flavor.
