Instructions
- Preheat your oven to 350°F (175°C).
- Combine graham cracker crumbs and 1/4 cup sugar in a bowl. Stir in melted butter. Press mixture onto the bottom and 1 inch up the sides of a 9-inch springform pan.
- Bake the crust for 10 minutes. Remove from oven and let cool.
- Reduce oven temperature to 325°F (160°C).
- In a large bowl, beat cream cheese and 1 3/4 cups sugar until smooth.
- Beat in flour, vanilla extract, and lemon zest.
- Add eggs one at a time, beating well after each addition.
- Stir in sour cream.
- Pour filling over the prepared crust.
- Bake for 60-75 minutes, or until the center is almost set but still slightly jiggly.
- Turn off the oven. Let the cheesecake cool in the oven with the door ajar for 1 hour.
- Remove from oven and cool completely on a wire rack.
- Chill in the refrigerator for at least 4 hours, or preferably overnight.
