Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup honey
  • 2 tablespoons chipotle peppers in adobo sauce, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes


Instructions

  1. In a bowl, whisk together honey, minced chipotle peppers, olive oil, lime juice, smoked paprika, garlic powder, salt, and pepper.
  2. Place the chicken cubes in a bowl and pour the marinade over them. Toss to coat evenly.
  3. Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Thread the marinated chicken onto the soaked skewers.
  5. Preheat your grill to medium-high heat.
  6. Grill the chicken skewers for 6-8 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
