- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup honey
- 2 tablespoons chipotle peppers in adobo sauce, minced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, whisk together honey, minced chipotle peppers, olive oil, lime juice, smoked paprika, garlic powder, salt, and pepper.
- Place the chicken cubes in a bowl and pour the marinade over them. Toss to coat evenly.
- Cover the bowl and marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
- Thread the marinated chicken onto the soaked skewers.
- Preheat your grill to medium-high heat.
- Grill the chicken skewers for 6-8 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
- Remove the skewers from the grill and let them rest for a few minutes before serving.
Notes
- Soaking the skewers prevents them from burning on the grill.
