Ingredients

  • 1 lb parsnips, peeled and cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 2 tablespoons bourbon
  • 1 tablespoon soy sauce
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the parsnips with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20 minutes, or until tender and lightly browned.
  4. While the parsnips are roasting, whisk together the honey, bourbon, soy sauce, and minced garlic in a small bowl.
  5. Pour the glaze over the parsnips and toss to coat.
  6. Return to the oven for another 5-7 minutes, until the glaze is bubbly and coats the parsnips.
  7. Serve immediately.
