- 1 lb parsnips, peeled and cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/4 cup honey
- 2 tablespoons bourbon
- 1 tablespoon soy sauce
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the parsnips with olive oil, salt, and pepper on a baking sheet.
- Roast for 20 minutes, or until tender and lightly browned.
- While the parsnips are roasting, whisk together the honey, bourbon, soy sauce, and minced garlic in a small bowl.
- Pour the glaze over the parsnips and toss to coat.
- Return to the oven for another 5-7 minutes, until the glaze is bubbly and coats the parsnips.
- Serve immediately.
Notes
- For a spicier glaze, add a pinch of red pepper flakes.
- If you don’t have bourbon, you can substitute with brandy or omit it.
- Ensure parsnips are cut into uniform sizes for even cooking.
