Description
This recipe makes tender, flavorful beef bites perfect for a high-protein, easy dinner. The slow cooker does most of the work.

- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1/2 cup butter
- 1 head garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup low-sodium soy sauce
- 1/4 cup beef broth
- 1 tablespoon cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for cornstarch slurry)
Instructions
- Place beef cubes in the slow cooker.
- Melt butter in a small saucepan or microwave. Add minced garlic and cook for 1 minute until fragrant.
- Pour the garlic butter mixture over the beef.
- Season with salt and pepper.
- Add soy sauce and beef broth.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
- If you prefer a thicker sauce, mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking.
- Serve the beef bites hot.
Notes
- Serve with rice, mashed potatoes, or your favorite side dish.
- Garnish with fresh parsley if desired.
