Description

This recipe makes tender, flavorful beef bites perfect for a high-protein, easy dinner. The slow cooker does most of the work.


Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1/2 cup butter
  • 1 head garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup beef broth
  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for cornstarch slurry)


Instructions

  1. Place beef cubes in the slow cooker.
  2. Melt butter in a small saucepan or microwave. Add minced garlic and cook for 1 minute until fragrant.
  3. Pour the garlic butter mixture over the beef.
  4. Season with salt and pepper.
  5. Add soy sauce and beef broth.
  6. Stir to combine.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
  8. If you prefer a thicker sauce, mix cornstarch and water in a small bowl to create a slurry. Stir the slurry into the slow cooker during the last 30 minutes of cooking.
  9. Serve the beef bites hot.
