- 1 rack of lamb (about 1.5-2 lbs)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the rack of lamb dry with paper towels.
- In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and pepper.
- Rub the herb and garlic mixture all over the rack of lamb, ensuring it’s evenly coated.
- Place the rack of lamb, fat side up, in a roasting pan.
- Roast for 15-20 minutes per pound for medium-rare, or until it reaches your desired doneness. Use a meat thermometer for accuracy (130-135°F for medium-rare).
- Remove the lamb from the oven and let it rest for 10-15 minutes before carving.
Notes
- For a crispier crust, you can sear the lamb in a hot pan before roasting.
- Adjust the amount of garlic and rosemary to your preference.
