A simple and nutritious slow cooker chicken stew.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place chicken in slow cooker.
- Add onion, carrots, and celery.
- Pour in chicken broth and diced tomatoes.
- Stir in thyme, rosemary, salt, and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender.
- Serve hot.
Notes
- You can add other vegetables you like, such as potatoes or green beans.
- For a thicker stew, you can mix a tablespoon of cornstarch with a little cold water and stir it into the stew during the last 30 minutes of cooking.
