Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste


Instructions

  1. Place chicken in slow cooker.
  2. Add onion, carrots, and celery.
  3. Pour in chicken broth and diced tomatoes.
  4. Stir in thyme, rosemary, salt, and pepper.
  5. Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender.
  6. Serve hot.

Notes

  • You can add other vegetables you like, such as potatoes or green beans.
  • For a thicker stew, you can mix a tablespoon of cornstarch with a little cold water and stir it into the stew during the last 30 minutes of cooking.
